I found this recipe on the internet just before the GST was introduced.
Mums all over Australia were trying to find ways to cut costs. I guess nothing
has changed !! Of course I tweaked the recipe to suit our own tastes and budget
1 cup of rolled oats / rice bubbles / corn flakes - it doesn't matter as long as there are some rolled oats in the mix and it equals 1 cup ( I mix it up )
1 cup sultanas, apricots, cranberries or other dried fruit
1/2 cup Whole meal or white Self raising flour
1/2 cup of raw sugar
1/2 cup of coconut
125g of butter
2 tablespoons of honey
Place butter, honey and sugar into a saucepan and melt until the sugar has dissolved
Mix all dry ingredients in large bowl
Add butter mixture to dry ingredients and mix until sticky
Press evenly into a greased slice tin. Use a potato masher to flatten out
Bake @ 180c for 20 - 25 minutes until golden
Cut into bars / squares when cold
Keeps for 5 - 6 days in airtight container

Hi Dee. I'd been stockpiling late last year so that I didn't need to do a big shop in the heat during Summer. When my shopping list gets back to normal I'll post it. At the moment it only has a handful of items on it.

ReplyDeleteAs long as you have rolled oats or muesli in it you should be fine. I also use the crumbs from the bottom of the cereal packets.
Deletecrumbs at the bottom of a cereal packet is known as dust in our house ...... muesli bars look fantastic must give them a go

ReplyDeleteHi all, I make a very similar slice and it freezes beautifully. I just cut it up into morning tea portions and pop into a Tupperware container in the freezer.

ReplyDeleteI made it and it's possibly the best muesli slice ever! I used rolled oats, sultana bran and cornflakes, dried apricots, dried blueberries and raisins. There is absolutely no way it will last 5-6 days! Thanks for sharing!

DeleteYum. Just made them. Swapped the sultanas with 50% gluten free muesli I wanted to get rid of and 50% Paleo fruit and nut. A very yummy slice. How do you not get fat cooking all your yummies!

DeleteHi Wendy, I just made this, and it's delicious. It's going in my book of " keeper" recipes. I too in the past have had trouble with Muesli slices sticking together. When I mixed this, it was coming together nicely in the bowl, and I thought "it's going to work". Fantastic hint about the potato masher!

ReplyDeleteI made this this week but didn't add enough wet ingredients so it crumbled. I just crumbled it up even more and put it in a nice jar for toasted muesli this week. Still delicious!

Lesley, I personally haven't tried oil instead of butter so I'm not sure it will work. Give it a go and if it doesn't stick things together it will still taste nice.
DeleteI personally don't think it will work because oil doesn't solidify you could try using coconut oil. If your worried about the butter you could always try using different types like nuttalex :)
DeleteAnother reader who has moved this not only to my "keeper" recipe file, but I've actually made this every week for the kids. I love sending them to school with snacks, with full knowledge of the ingredients. I use a 33% mix of dried apricot, sultanas and cranberries. Since I always do my washing up by hand (and I'm too lazy to wash even one extra item), I don't flatten the slice down with a potato masher, I just wet my hands and pat it down firmly.
ReplyDeleteSeven years after you posted this Wendy, I came across it when looking for a new recipe for school lunch boxes. I made it this afternoon and misread the recipe and put in 1 cup of raw sugar. Oh dear! It's sweet, so sweet. The kids love it though and I have wrapped the rest (bar sizes) in foil for the week so they can pop them in their lunch boxes.

(Ii) I've been gifted a packet of pre-made muesli with fruit, do I use only 1 1/2 cups or do need to include extra to account for the fruit in the muesli?
