What Makes You Happy ? December 2014

With December being so busy for many,  it's still important to take time out and reflect on the things that make you happy.  It will bring you a sense of peace,  contentment and joy to your life.

Here's what makes me happy -

*  Christmas decorations.  I look forward to getting them out each year.  I also like to make some and they look great on the tree ( if I do say so myself ).






*  Our chickens.  They are such funny creatures to watch as they run around fighting over a strawberry.  It's almost like watching a cartoon but in real life.




*  A good home cooked meal.  It warms me up inside knowing I'm feeding my family good food that will help them to stay healthy and strong.

  1. Chickens are very relaxing to watch, I could spend ages just sitting watching them go about their business. They don't worry and stress like we do, I think we could learn a thing or two from them.

    Those decorations are very pretty and do look lovely on your tree :)

  2. Hi Wendy,

    Love your homemade Christmas decorations, they are very cute!!
    I was wondering whether you could help me.
    I have a whole chicken in the freezer and would like to cook it for hubby on Saturday.
    Are you able to give me some tips? When should i take it out to defrost? How long should it take to cook in the oven? What seasonings/dressings should i use? I've never done a whole chicken before.

    1. Hi Briana, get your chicken out of the freezer tonight and place it in a dish or on a plate and defrost it in the fridge. On Saturday late arvo, unwrap, pat it dry with paper towel and place it in a baking tray / dish with sides. I like to put a cut up lemon in the inside cavity. Brush the chicken with melted butter and season with salt, pepper and dried mixed herbs, Depending on the size of the bird, I cook a small one for 50 - 60 minutes at 180 degrees. To check if it's cooked use a skewer and insert into the fleshy part. If the juices run clear then it's cooked.

      Rest the chook for at least 10 minutes with a little foil over the top.

      Another way to cook it is to place the chook on a biscuit cooling rack then place it over a baking dish to catch the drips. It cooks evenly and I prefer this method. You can use any seasoning you like - taco, Italian, hot and spicy.

  4. My kids getting excited about Christmas make me happy & the song "Feliz navidad" that makes me happy too, as does exercise! Oh, an school holidays, they make me happy too! Lovely to have my kids home for an extended time.

  5. You most certainly not wrong your decorations are fabulous...thanks for the idea...what a great way to use up broken necklaces etc..Also thanks for any recipe you share I really love the way you cook...so yummy and healthy looking! Merry Christmas!

I have my eldest son, daughter in law and grandchildren coming all the way from Tassie for Christmas , this makes me so happy for our family to be together I feel very blessed.
